Boston Brown Bread
Ingredients
- 1 pound chopped dates
- 2 teaspoons baking soda
- 2 cups sugar
- ½ cup shortening
- 2 eggs
- 4 cups sifted all-purpose flour
- 1 cup walnut pieces
- 1 cup raisins
- Six 14- to 16-ounce empty, clean vegetable or fruit cans
Instructions
- Preheat the oven to 325 degrees F.
- Combine the dates and baking soda in a bowl. Pour 2 cups boiling water over the mixture and let stand for 5 minutes.
- Combine the sugar, shortening, and eggs in a large bowl. Using a mixer, beat at medium-high speed until creamy. Add the date mixture and flour and stir until well blended. Add the nuts and raisins; mix well.
- Fill the cans about two-thirds full with batter. Bake for 1¼ hours, until a wooden pick inserted in the center comes out clean. Cool in the cans on a wire rack for 15 minutes before removing from the cans and returning to the rack to cool completely.
Serves 36.

One Pot Clambake
Ingredients
- 1 large onion
- 6 garlic cloves, minced
- 4 tablespoons olive oil
- fresh ground pepper
- 1 teaspoon sea salt
- 1/2 teaspoon red pepper flakes
- 2 cups white wine
- 2-3 cups chicken broth (fine to use stock cubes)
- 12 small red potatoes
- 2-3 ears corn on the cob, cut into 1 to 2 inch rings
- 1 sausage ring, cut into 2 inch pieces (polish kielbasa etc.)
- fresh herb or dried herbs
- fresh seafood (use all or any combo of the following, Clams, mussels, small lobster tails,shrimp, scallops, prawn)
Directions
- In a very large stock or pasta pot, sauté onions in olive oil until light brown, add garlic and pepper flakes, green pepper and salt, sauté a few minutes longer.
- Add wine and reduce by half, add stock.
- Add potatoes and sausage, cook 10 minutes, until almost cooked through; add corn and herbs.
- Add seafood last, starting with items that take the longest to cook, shrimp should go into the pot last, cover pot tightly with lid after each seafood addition.
- Serve immediately from the pot, to retain the heat, large pasta dishes work best.
- Serve with plenty of hearty crusty bread, for mopping up the “soup”.

Citrus Champagne Punch
Ingredients
- 2/3 cup fresh lemon juice
- 2/3 cup superfine sugar
- 1 cup vodka
- 1/2 cup limoncello
- 2 teaspoons vermouth
- 1 (750 ml) bottle chilled dry Champagne or sparkling wine
- Ice
- Lemon twists, for garnish
Directions
Combine the lemon juice, sugar, vodka, Limoncello, and vermouth in a large nonreactive bowl and stir until the sugar is completely dissolved. Cover and refrigerate until chilled, 1 to 2 hours. Add the Champagne and stir to combine.
Serve over ice in highball glasses, garnished with lemon twists.

Grilled Asparagus with Parmesan
1 pound asparagus
1 T extra-virgin olive oil
salt/pepper to taste
about 1/2 cup freshly grated parmesan cheese
Preheat charcoal or gas grill to medium high (you can only hold your hand over it for a few seconds at that heat.)
Place grill pan on top of grill and heat while you prepare asparagus. Break one piece of asparagus to see where the tough part of the stem starts, then trim ends of asparagus all to that length. Cut asparagus on the diagonal into pieces about 3-4 inches long and place in ziploc bag. Put olive oil into bag and sprinkle in a little salt and pepper, then mix asparagus around in the bag until it’s well coated with olive oil.
Pour asparagus into grill pan and grill, turning every 2 minutes, until asparagus is getting browned edges and is barely tender-crisp. Cooking time will vary depending on your grill, but I cooked mine about 10 minutes. Serve asparagus hot with freshly grated parmesan sprinkled over.
